The sandwiches they show me on TV don’t look that different than the sandwiches I buy at local fast-food or fast-casual places — except for the tomatoes. Restaurant tomatoes (high-end restaurants occasionally excepted) are tasteless at best and disgustingly grainy at worst. But there’s a Subway here in Waco — just one — where, sometimes, not all the time or even most of the time but sometimes, they have fantastic tomatoes. Red, ripe, full of flavor. I have asked the people making the sandwiches where those tomatoes come from and they just shrug. One of these days the manager will be there and I’ll learn the secret….
